Recipe Ingredients for Chicken and Lentil Soup

3 tbsp Olive Oil
1.75 large Onions
1.4 cup, chopped Carrots
537 grams Leeks, (Bulb And Lower Leaf-portion)
2.5 cup, pieces or slices Mushrooms
0.5 Glass Wine
4 tsp Chicken Stock
0.5 cup (8 fl oz) Water
1 tsp, crumbled Bay Leaf
1 tsp Oregano, Ground
1 tsp, leaves Basil, Dried
335 grams Chicken, Breast, Meat Only
0.75 cup Lentils, Mature Seeds

Recipe Directions for Chicken and Lentil Soup

  1. Heat oil. Add all the vegetables and cook on low heat for 5 - 7 minutes until soft but not coloured.

  2. Increase heat to medium, add wine and cook for 2-3 minutes until alcohol is evaporated. Add stock, water, bay leaves and herbs bring to boil then simmer for 15 minutes.

  3. Add lentils, recover and simmer until lentils are tender (green lentil aprox. 40 minutes).

  4. Stir in chopped cooked chicken, and heat through (5 - 10 minutes). Season ro taste with salt and pepper.
