This chicken dish is simple and very filling. It is perfect for anytime of the year. It is especially good served with a 1/3 cup of long grain and wild rice or green beans and a green salad.
| 1/2 | pound mushrooms, sliced |
| 1/2 | cup green onions, chopped |
| 1/2 | cup water |
| 2 | tbs cornstarch |
| 1/2 | cup fat free yogurt |
| 3 | tbs fat free chicken broth |
| 1 | tsp chicken bouillon |
| 1/2 | tsp pepper |
| 20 | oz. chicken breasts, cubbed |
- Stir 1/4 cup of water and cornstarch until smooth.
- Stir in yogurt, remaining 1/4 of water, mushrooms, onions, pepper, broth, and bouillon.
- Cook chicken breast that are cut into 3rds in a sauce pan for about 12-15 minutes or until there is no pink left.
- Add the mushroom sauce and heat on a medium heat for another 5 minutes.
