Chicken and Mushrooms in Creamy Sauce Recipe

This chicken dish is simple and very filling. It is perfect for anytime of the year. It is especially good served with a 1/3 cup of long grain and wild rice or green beans and a green salad.

Ingredients
1/2 pound mushrooms, sliced
1/2 cup green onions, chopped
1/2 cup water
2 tbs cornstarch
1/2 cup fat free yogurt
3 tbs fat free chicken broth
1 tsp chicken bouillon
1/2 tsp pepper
20 oz. chicken breasts, cubbed
Directions
  1. Stir 1/4 cup of water and cornstarch until smooth.

  2. Stir in yogurt, remaining 1/4 of water, mushrooms, onions, pepper, broth, and bouillon.

  3. Cook chicken breast that are cut into 3rds in a sauce pan for about 12-15 minutes or until there is no pink left.

  4. Add the mushroom sauce and heat on a medium heat for another 5 minutes.
