Do you mean the kind from pizzeria's in New York like a calzone? And do you mean from scratch or for reheating?
a chicken breast with something put on it and rolled up then toothpicked to cook it the first time, i don't know what theyre really called
I make spinach chicken rolls as follows:
- Prep a ball of fresh spinach (you can also use frozen chopped if you thaw it first and squeeze out all water)
- Roll 1 thin breast of chicken around the spinach ball
- Then roll a slice of honey ham around that
- Then roll a slice of provolone around that
- Prep more rolls as above, one per person
- Then put all rolls into a casserole dish
- Pour 1/2 can of Campbell's mushroom soup and 1/2 can Campbell's cream of chicken soup (all low-fat, low-sodium)
(you can add a little water if desired)
- Bake at 375 deg F until chicken is well-cooked (30-60 minutes depending on chicken thickenss and oven).
- Every 1-15 minutes I spoon some soup ontop of the rolls to keep them moist.
You can serve as whole rolls or cut into slices.
Serve with another vegetable (it's a good way to trick the kids into eating spinach) and maybe a starch depending on diet.
What you roll around it or stuff inside it can vary based on what you want to eat (for example you can use bacon or use low-fat ham instead of honey ham, you can also use stuffing instead of spinach and also you can choose a different cheese or skip the cheese altogether).
