It's hard to find low-carb soup, so I decided to invent one and it's really good. I use Portuguese linguica or Mexican chorizo for the spicy sausage.
| 10 | cups water |
| 3 | breasts of chicken |
| 2 | oz spicy sausage |
| 1 | cup diced celery |
| 1 | cup sliced carrots |
| 3/4 | cup diced onion |
| 2 | tbsp minced garlic |
| 1/4 | cup lemon juice |
| 2 | tbsp tomato paste |
| 1 | tbsp salt |
| 1 | tsp pepper |
| 2 | tsp parsley |
| 1 | tsp basil |
- Boil chicken in the water with onion, garlic, lemon juice, salt, and pepper until cooked through (about 1 hour over medium heat.)
- Remove chicken breasts from water and shred or dice the chicken into bite-size chunks, then put the chunks back into the pot along with the tomato paste, celery, carrots, and sausage. Let simmer over low-med heat for about 30-45 minutes; stirring occasionally.
- Stir in parsley and basil. Simmer for another five minutes, then serve immediately.
