Easy chicken stir fry, lots of mushrooms

Recipe Ingredients for Chicken Stir Fry with Brown Rice

1 1/2 lbs chicken breast, diced
3 cups brown rice
1 tbsp olive oil
1 clove garlic
1/2 cup teriyaki sauce or stir fry sauce
3 tbsp soy sauce
2 cups broccoli
2 cups sugar snap peas
2 cups bell peppers
1 cup yellow squash
1 cup green beans
4 cups mushrooms

Recipe Directions for Chicken Stir Fry with Brown Rice

  1. Dice chicken and marinate in 1/2 the teriyaki or stir fry sauce for at least 30 minutes, overnight is fine.

  2. Cook brown rice in a rice steamer, or boil on the stove according to directions.

  3. Heat oil in a large skillet over medium-high heat, add minced garlic and saute for a couple of minutes.

  4. Add chicken and remaining stir fry/teriyaki sauce, saute until chicken is done. Add soy sauce.

  5. Add vegetables (2 bags of frozen stir fry mix works great) and cook for about 5 minutes, until veggies are tender-crisp.

  6. Serve over rice.
