Chicken, Tomato, Bean Crock Pot Soup Recipe

modified by Fix-it and Forget-it Diabetic cookbook, p. 152, tortilla soup

Ingredients
12 oz chicken
1 clove garlic
1 1/2 tsp. oil
28 oz broth, beef
28 oz tomatoes, canned, stewed
1 c salsa
1 tbs cumin
1 cup pinto beans (cooked)
Directions
  1. cook, debone, and shred chicken

  2. add minced garlic to oil in slow cooker. Saute.

  3. Combine all ingredients. cover. Cook on Low 8-10 hours.

  4. May ladle soup over cube of Moneterey Jack Cheese; garnish with fat-free sour cream and tortilla chips
