| 1/2 | pound chicken breasts, boneless and skinless, cut into cubes |
| 8 | ounces dry pasta, whole grain |
| 1 | medium zucchini, sliced |
| 1 | medium onion, sliced |
| 1 | medium green pepper, seeded and sliced |
| 2 | cups fresh baby spinach |
| 1 | medium tomato |
| 3 | tbsp fresh basil leaves, chopped |
| 2 | cloves garlic |
| 1/2 | tbsp extra virgin olive oil |
| 1/2 | tsp salt |
| 1/4 | tsp pepper |
- Prepare pasta according to package directions. Drain and keep warm.
- Saute chicken in 1/2 oil until no longer pink and juices run clear; remove from pan and set aside.
- Add remaining 1/2 oil to skillet and saute zucchini and peppers for 2 minutes. Add onion, garlic, and basil and saute for 2 minutes. Return chicken to the skillet and add the tomato and spinach; heat through.
- Toss with the warm pasta and serve. Delicious!
