Chickpea, Carrot, and Currant Salad
| 15 | ounce Chickpeas (Garbanzo Beans, Bengal Gram), Mature Seeds, Canned |
| 2 | cups shredded carrots |
| 1 | cup currants |
| 1/4 | cup cilantro |
| 1/4 | cup parsley |
| 2 | tablespoons olive oil |
| 1 | tablespoon orange juice |
| 1 | tablespoon lemon juice |
| 1/2 | teaspoon caraway seeds |
| 1/2 | teaspoon coriander seeds |
| 1/2 | teaspoon cayenne |
- Mix the chickpeas, carrots, and currants in a bowl.
- In a separate bowl, mix the rest of the ingredients. Pour this mixture over the chickpeas, carrots and currants. Mix well and refrigerate at least one hour in a sealed container before enjoying.
