Chickpea & Cumin Burgers

I made these up for 60 people tonight, and Saroful wanted the recipe......here it is

You need:
1Tblsp olive oil
1 small onion, finely chopped
2tsp cumin seeds
225g young spinach leaves
1Tbslp hot curry paste
2X400g cans chick peas, drained
2Tblsp crunchy peanut butter
25g fresh white bread crumbs
salt and freshly ground black pepper
vegetable oil, for shallow frying
burger buns and salad to serve

Method:
Heat olive oil in a large frying pan and cook the onion for 2-3 minutes until beginning to soften. Add the cumin seeds, cook for 1 minute then add the spinach and cook over a high heat for 5 minutes until it has wilted and any water released has evaporated.

Stir in the curry paste and remove from the heat.

Place the chickpeas in a food processor with the peanut butter and breadcrumbs and whizz to form a thick paste. Add the spinach mixture and some seasoning and pulse until well blended. Using damp hands, shape the mixture into 6 even-sized cakes.

Wipe out the frying pan with some kitchen paper and heat 1-2 tablespoons of the vegetable oil. Cook the burgers in batches for 4-5 minutes on each side until golden brown.

Spicy? Not Spicy?

And do you really need the oil? Or would a good non-stick pan work?
looks about falafel-spicy.  And I'm betting you need the oil to get a good crunch going on the outside, although it should retain its integrity without frying.  It would just be mooshy.
not spicy enough for me! but we put chilli (fresh and hot) on every meal......

I left out the peanut butter (in case of anaphylactics), and substituted oats for breadcrumbs (cause I didnt have any), to me the mix was not hot spicy - just flavored.

I think you need a bit of oil to fry them - but the mix would make a good loaf if you wanted to bake it.

just got back. The chickpea burgers were beautiful, and all got devoured. Cooked on the BBq perfectly.

Love to have you. This was a music workship, band performance (called Milk) and fundraiser. I had to leave just as all the fun started ... my 11 year old is staying the night....
QUESTION:when you say they cooked on the bbq, I am guessing grill?  and did you coat the wire rack with anything to prevent sticking?

We cooked them on a hot plate, with just a base of olive oil while it was heating.

I think you could bake it too - with a tomato-chillli salsa on top!
