Chickpea Curry anyone?

2 tbsp vegetable oil

1 onion

1 tbsp curry powder

2 tbsp flour

1 cup water

1 red pepper

1 yellow pepper

1 cup diced zucchini

3/4 cup butternut squash

1 can chickpeas 540mL (19oz)

1/2 cup vegetable broth

1/4 cup fresh parsely

Heat oil and onions

Add curry powder and flour

Add water, stirring constantly to prevent lumping

Add peppers, zucchini & squash

Bring to a boil cook for about 10 min

Add chickpeas and broth, reduce heat and simmer for 10 min.

Add parsley just before serving!!!!

I love chickpea curries and this one sounds great!

The recipe says 6 servings.

mmm i love chickpea curry.

I would always say though, if you have time it always tastes better the day after when its just been allwoed to sit in the fridge and go cold, then when you heat it up the flavours really seem to have soaked into the chickpeas and its always much nicer than fresh!

I eat this everyday almost. It's great. By the way, the meat version of this for Indians is actually Chicken Curry, substituting chickpeas for chicken. Anyone who is vegetarian always asks for chickpea curry instead.

do u need the squash? i dont have that, is there something i can sub?
