Recipe Ingredients for Chile Rellenos Casserole

5 egg whites
2 egg yolks
10 oz. reduced fat cheese, monterey jack
5 oz. no salt added tomato sauce
8 oz. whole green chilies, seeded
1/4 cup diced onion
1 chili powder to taste
1 Cooking spray

Recipe Directions for Chile Rellenos Casserole

  1. Preheat oven to 350.

  2. Spray a square glass pan with cooking spray.

  3. Layer half of the chiles, 1/2 the onion, 1/3 of the cheese, and dust with chile powder.

  4. Repeat layers.

  5. Beat egg whites until thick but not stiff and lightly blend with egg yolks.

  6. Pour egg mixture over casserole.

  7. Bake for about 20 minutes. Be sure that the casserole is not soupy in the middle.

  8. Pour tomato sauce over casserole and top with remaining cheese.

  9. Bake until casserole is firm and cheese is bubbly. (About 20 minutes).
