Chilli Con Carne Gi Jane Recipe

Makes 4 servings


A lower-gi version of an old favourite

Ingredients
12 oz beef, minced
1 onion, chopped
1 clove garlic, crushed
1 (red) chili pepper, finely chopped
1 teaspoon olive oil
800 g chopped tomatoes
12 oz cooked kidney beans
2 teaspoons chili powder (or to taste)
1 teaspoon oregano
4 oz (brown) rice
Directions
  1. Cook the minced beef in a non-stick pan, stirring frequently to break up the lumps. Drain and reserve

  2. Heat the olive oil and cook the onion, chili and garlic until softened and coloured.

  3. Stir in the chilli powder and allow to cook for another minutes.

  4. Add the minced beef back to the pan with the drained kidney beans, seasoning and chopped tomatoes. Simmer for 30 minutes

  5. Serve with the cooked brown rice
