A lower-gi version of an old favourite
| 12 | oz beef, minced |
| 1 | onion, chopped |
| 1 | clove garlic, crushed |
| 1 | (red) chili pepper, finely chopped |
| 1 | teaspoon olive oil |
| 800 | g chopped tomatoes |
| 12 | oz cooked kidney beans |
| 2 | teaspoons chili powder (or to taste) |
| 1 | teaspoon oregano |
| 4 | oz (brown) rice |
- Cook the minced beef in a non-stick pan, stirring frequently to break up the lumps. Drain and reserve
- Heat the olive oil and cook the onion, chili and garlic until softened and coloured.
- Stir in the chilli powder and allow to cook for another minutes.
- Add the minced beef back to the pan with the drained kidney beans, seasoning and chopped tomatoes. Simmer for 30 minutes
- Serve with the cooked brown rice
