Chinatown-Menu Chicken Lettuce Wraps Recipe

Fun low-fat chinese restaurant-style dinner, or great party appetizer. (*note* analyzer did not pick the low-sodium soy sauce, which reduces the salt content, nor did it understand water chestnuts, which I'll list here - 'cause they are a low-cal, low-salt NO fat food! ) per 32 grams of WATER CHESTNUT (2 cups)= Calories 30 , Total Fat 0g, Sodium 5mg, Cholesterol 0mg , Carbohydrate 8g - 3%, Dietary Fiber 3g - 12%, Sugars 1g , Protein 1g, Vitamin A 0% , Vitamin C 0% , Calcium 0% , Iron 90%

Ingredients
2 teaspoons vegetable oil
1 pound chicken breasts, rough chopped
2 teaspoons cornstarch
1/2 cup water
8 scallions, minced
2/3 cup canned water chestnuts, rinsed & drained
2 tablespoons soy sauce, low sodium
1 tablespoon fresh ginger, minced fine
1 tablespoon oyster sauce
1 head butter lettuce, leaves separated
Directions
  1. Heat oil in non-stick pan over medium heat. Dust chicken with cornstarch. Add chicken to pan and saute until cooked.

  2. Remove from pan, let cool then chop fine or run food processor.

  3. Return pan to medium high, add water, stirring constantly till simmering. Add chicken and all remaining ingredients, except lettuce, to pan and heat thru, approx. 2-3 min.

  4. To plate, take one full lettuce leaf and spoon a rounded table spoon of chicken mixture to one side and then wrap as though rolling a tortilla. repeat until all filling mixture is used. Divide wraps across four plates.
