- skim any fat from chicken broth. in a small bowl, combine 3 tablespoons broth with cornstarch. stir to blend.
- place remaining broth in medium saucepan. Add ginger and bring to boil. Stir in cornstarch mixture and cook, stirring, until soup thickins slightly, about 1 minute.
- gradually add eggto boiling soup in a thin stream, stirring with fork. Add soy sauce and scallion, discard ginger.
