Chinese Egg Drop Soup Recipe

Ingredients
3 cups chicken broth
2 teaspoons cornstarch
2 slices ginger
1 medium egg, beaten
1/2 teaspoon soy sauce
2 tablespoons scallions, minced, greens only
Directions
  1. skim any fat from chicken broth. in a small bowl, combine 3 tablespoons broth with cornstarch. stir to blend.

  2. place remaining broth in medium saucepan. Add ginger and bring to boil. Stir in cornstarch mixture and cook, stirring, until soup thickins slightly, about 1 minute.

  3. gradually add eggto boiling soup in a thin stream, stirring with fork. Add soy sauce and scallion, discard ginger.
