Recipe Ingredients for Chinese Noodle Soup

4 t sesame oil
20 oz turkey breast
1 1/2 cups green onions
2 cloves garlic
1 T fresh ginger
4 c chicken broth
1 lb bok choy
6 oz soba noodles
3 T soy sauce
1 T rice vinegar

Recipe Directions for Chinese Noodle Soup

  1. Heat 2 t of sesame oil over medium high heat. Add the turkey, 3/4 of the scallions, garlic, and ginger. Cok, stirring and breaking up clumps of turkey, until the turkey is no longer pink. Remove to a plate.

  2. Add the remaining sesame oil and all other ingredients, and bring to a boil. Boil until the noodles are softened and the bok choy is wilted, about five minutes.

  3. Add the turkey mixture, return to the boil, then remove from heat.

  4. Serve with the reserved scallions as garnish.
