Delicious, bright emeralc chicken dish re-created from Phoenix's Chino Bandito Restaurant - but healthy!

Recipe Ingredients for Chino Bandito Emerald Chicken

1 T sesame oil
2 T water
5 green onions, minced
2 T fresh ginger
4 cloves garlic, pressed
8 oz. chicken breast
2/3 c brown rice

Recipe Directions for Chino Bandito Emerald Chicken

  1. Cook rice as directed.

  2. Combine onions, ginger and garlic with oil and water in a food processor - process until blended but not completely pureed. Add salt to taste.

  3. Trim fat and grill chicken breast. Let rest 2-3 minutes then slice into 1/3 inch pieces across the grain.

  4. Serve chicken and sauce over rice.
