Chowdy Doody Recipe

"Smoky roasted chicken and corn chowder" From "Eat, Shrink & Be Merry"

Ingredients
4 slices bacon (reduced salt)
1/2 cup diced onion
1/2 cup diced celery
1/2 cup diced red bell pepper
2 tsp minced garlic
1 tsp thyme
2 tbsp flour
1 1/2 cups chicken broth (reduced sodium)
370 ml 2% evaporated milk
28 oz diced tomatoes
14 oz cream style corn
550 g roasted chicken
1 tbsp barbecue sauce
1 tsp black pepper
1/4 tsp salt
Directions
  1. Cook chopped bacon in a large, non-stick soup pot over medium high heat until lightly browned but not crisp (or buy pre-cooked like i did). Stir in onions, celery, red pepper, and garlic. Cook and stir until vegetables begin to soften, about five minutes.

  2. Add thyme and four. Mix well. Stir in broth and evaporated milk. Bring mixture to a gentle boil and stir continuously until soup thickens slightly.

  3. Reduce heat to medium low. Stir in remaining ingredients. Cover and let simmer for 10 minutes, stiring occasionally.

  4. Serve hot.
