Greetings to all. This thread is being started to continue, not to abandon, the old thread, Christian Calorie Counters. Thank you Danceswithforks for that wonderful thread.

This thread is for the purpose of lifting up our Lord and Savior Jesus Christ, and in doing so, encouraging and motivating one another on their weight Loss and weight maintenance journey, and encouraging each other in life itself.

So please come and share your needs, share your successes, encourage one another, and help us motivate each other, all in the love of the Lord.

There is an ongoing challenge if you would like to participate. It starts on the first of every month and ends at the first of the next month. On the first of the month, you come to this thread and post your weight and your 3 core measurements (chest, waist, hips). Then throughout the month you collect points for different categories of the challenge. Each week you post your points for that week. The points are then updated on the thread:
Christian Calorie Counters Challenge Roster & Updates. You go to that thread just to view the list, but stay on this thread for the purpose of posting stats and points, and above all - fellowship with each other. You do NOT have to take part in the challenge in order to be a part of this group.

I was gonna have a sirloin dinner tonight, but my DH fixed a quiche instead. I guess I will have to get some Sirloin and fix that sometime in the next few days.

Molly, You are getting a TON of veggies in your meal plans!  That's fantastic.  I was all proud of myself for the squabble amount that I've been putting in dinners, but 8 serving in dinner alone?!? WOW!  Your bathroom must be a busy place (**sorry, can't help the jokes sometimes**)
Molly - The ingredients of the quiche were, if I am remembering correctly,
Hash Browns
Eggs
Cheese
Bread cubes
Bacon
Seasoning

That's the best I can remember.

Good Morning Everyone Just wanted to let you know that I would like to join in on the challenges beginning next month. I want to try to learn this site a little better first. Also I had to buy a new scale and right now it shows I gained instead of lost,hopefully it is just the scale. I hate to log a gain!!

For anyone who has been praying for Samuel God has answered prayers PYTL!! He was able to receive chemo yesterday and if he continues to do well may get to go home for a few days!!! Just because the doctors do not give him much hope does not mean that is the final decision .We serve a mighty GOD!!!

On another subject I love Salmon however I am getting tired of how I am preparing it. I use Teriyaki sauce and bake it in the oven usually with Asian veggies and bean sprouts. Any suggestions? Also could use suggestions for Tuna steaks!!

Finally, some cooler autumn weather! Nice to cuddle a bit before jumping out of bed into the chilly morning!

Way, I love making Salmon in my Foreman Grill, sprinkled with a bit of lemon pepper! Occasionally, I'll marinate salmon, tuna or swordfish in fat free salad dressings...such as Italian, Greek or even Honey-Mustard, then grill or bake...yummy!

Pam, there are a number of good quiche recipes here on CC, too! I personlly like the Bisquick (lo-fat version) Impossible pie recipes for quiche and quiche-like meals.

I got a wonderful message from a new friend met at Camp over the weekend! What a blessing to receive another meditation!

 

Thank you for the suggestion on the salmon. I think I will try the lemon pepper today. I had not thought of that on salmon but I do like lemon pepper on chicken. Maybe some ginger fat free dressing might be good. God help me today I am in the mood to bake today, that could be very bad!!!

Sue - Thank you, but I try to stay away from quiche, as much as I love it, because I am not good with portion control when it comes to food like that, plus when potatoes are used, that plays havoc with my diabetes.

Mandy, I?ve wanted to ask Molly that question but didn?t want to get too personal.  Ha-ha.  I know we?re all friendly here.  So?now that it?s out in the open... ha-ha.  Hope you don?t mind this question?Molly or Pam or other veggie lovers?without getting a little too personal do you have any side effects from all the veggies?  I LOVE veggies but find that I?m scared to eat them sometimes because they make me feel so ummmm ?gassy?.  Oh boy, maybe I should have started a new thread to ask this one!  J

Mmm, quiche.  I haven?t had that in ages.  I?m going to check out those recipes.  I?m making a yummy chicken chili in the crockpot today.  It?s not really feeling like Fall here yet (FL) but I?m hoping for some cooler weather soon. 

Oh yeah, Jennifer?don?t pay any attention to the scale.  Scales are evil.  As long as you know you are making better, healthier choices you should feel good about that!  I know the scale is important because weight loss is really about the #?s but it can get rather stressful seeing those #?s fluctuate sometimes!  I?ve FINALLY gotten to the point where I can put the scale away all week and have 1 weigh in day (Saturday). That?s the only day the scale comes out or else I?ll obsess over it.  J  Sad but true!

Good Morning everyone!  I've never posted in this group before, but I have read alot of your post and I would like to join in on your daily uplifting if I could.  I am really going thru a rough time right now and I need all the prayers and support I can get.  You can read my journal entry from yesterday for all the info.  Thank you and have a blessed day.
Hi Sherry! You can feel free to ask aboslutely anything you care to ask on this thread. The only thing that I would ask is that nobody give any glory to satan. That is the only stipulation. And that is obvious to us, but in case there are those lurking that might not know, then that is for them. Now, to answer your question - I have absolutely no problem eating all those veggies. Years ago, I suffered from IBS and lactose intolerance. God has healed me of those, and ever since then, I can eat pretty much anything comfortably. Now, I did eat an over abundance of sunflower seeds yesterday evening, which caused some unpleasant side effects, but that is not the norm.

Jennifer - may I call you that? - I have fixed Tilapia on the foreman grill with garlic & herb seasoning, and it was fabulous. Also, That would be great for you to join in on the challenge next month. I will post a reminder a few days before November challenge begins.

Sue - did you get over the anger issue you had yesterday? Did it cause emotional eating? How are you today?

Jennifer,  I may have a solution for your salmon/ desire to bake dilemma for today.  I made this for my family last night.  It was a lot of fun, low fat and low cal.  I ended up making double because it didn't seem like much (fat girl mentality) and I ended up refrigerating the entire second batch.  This was enough for my family of four.....in which I am the only girl.

**PREPARE FOR LONG RECIPE POST**

Salmon Spirals

Filling

  • 2 cans (7 1/2 oz each) skinless, water-packed pink salmon, drained (I actually had fresh salmon that I steamed and flaked.  Tastes better and 15 oz if salmon is about 1 lb.)
  • 1/2 cup each grated carrot, finely chopped celery, and chopped green onions
  • 2 Tbsp. eachlemon juice and low-fat sour cream
  • 1 Tbsp white wine vinegar (I used apple cider vinegar)
  • 1/2 teaspoon dry mustard
  • 1/4 teaspoon black pepper

Dough

  • 2 cups all-purpose flour
  • 1 Tbsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp cayenne pepper
  • 2 Tbsp Canola Oil
  • 7 oz. skim milk roughly

Combine salmon, carrots, celery and green onions in a medium bowl.  In a small bowl, combine lemon juice, sour cream, vinegar, mustard and pepper.  Stir until smooth.  Add sour cream mixture to salmon mixture.  Mix well.  Set aside.

In a large bowl, sift together flour, baking powder, salt and cayenne pepper.  Set aside.

Add canola oil to a measuring cup.  Add enough skim milk to oil to make 1 cup.  Blend well.  Add liquid to dry ingredients.  Mix until a ball forms.  Knead on a lightly floured surface 10 times.  Roll out dough into a 12-inch square (or as close as you can get to a square!)  Make sure rolling surface is sprinkled with enough flour to prevent sticking.

Spread salmon mixture over dough to within 1/4 inch of edges.  Roll up like a jelly roll.  Pinch seams to seal.  Using a sharp knife cut into 10 slices.

Spray a large baking sheet with non-stick spray.  Place salmon spirals on baking sheet without overlapping.  Bake at 400 degrees for 20 minutes, or until golden brown.  Best if served immediately

Makes 10 salmon spirals

  • PER SPIRAL: 167 calories
  • 4.7 g fat
  • 20.5 carbohydrates
  • 10.8 g protein
  • 467 mg sodium
  • 23 mg cholesterol
  • Calories from fat 25.2%

I also made a fat free/ reduced fat tarter sauce with minced onions, relish and fat free/ low fat mayo and black pepper.  ENJOY.

As for me I am having an AHA! day today.  I actually logged a gain today.  Not thrilled about it.  Bottom line.....I NEED TO EXERCISE.  I need to remember that moving has to be a priority.  I don't want to see this gain on Monday.  Considering buying a new scale.  Even though it's not the scales fault.....just the messenger boy/ piano player.

Wow that looks really good right now.  I'm ready for lunch!  :)  I hear ya on the exercise too.  I tell myself that EVERYDAY.  I still have not found the motivation to actually get off my lazy butt and get into any kind of consistent routine though!

I checked your journal and just wanted to say that I?m so sorry that you are feeling so down about your little Cooper.  I certainly know how animals become an important part of the family and how much it hurts when they are ill or injured.  Pam?s family just recently dealt with the loss of a beloved dog so I?m sure she can relate to how scared you are feeling right now.

Lord, we ask you to comfort Chrissy and her family today while they deal with the injury of their family pet, Cooper.  Father we praise and thank you that you are our COMFERTOR  and that you and you alone know how to comfort each of us intimately. We all have things in our lives through which you can show your presence to us.  Thank you for your presence Lord.  Thank you for all you give to us.  Amen.

Welcome Curly! From personal experieince, I can assure you that the prayers of this group of faithful folks will uplift you!

The anger issue finally work itself through me, and by NOT eating over it, I could work through the why's and wherefore's of it, discuss it without explosion, and find resolution. Praise God and Thank you all, I got through the day without going off my food plan! A good work out in the pool and a long conversation with a Christian friend were the final pieces of the recovery puzzle for yesterday!

Pam, I can relate about some foods I must avoid because I am powerless over portion control! Sometimes though, I just have to ask God to allow me to satisfy a taste and grant me the Power to not overindulge! I believe if we feel deprived all the time, we will be lead astray from our food plans and healthy choices. God wants to feed us, but only He has the power to helps us make the right choices.
Chrissy - I apologize for not having seen you come in. Welcome to this group. We are so glad to have you. I read about Cooper. I'm sure that is very hard for you to sit back and watch Cooper seem to suffer so much. The good news is - if the vet thinks that Cooper will be fine, then that is a pretty strong statement, because most vets I've known are quick to tell you if there is not much hope for your pet. So, we will pray for Cooper to recover quickly from whatever is ailing him and causing that pain. We will also pray for you to know how to help Cooper and to have peace. I can relate so much to Cooper.

Lord, I come to you today with thanksgiving in my heart for your magnificence and for your life within me. I thank you for the privilege that we have to bring our needs before you and the promises that you give to us in meeting those needs. Lord, I pray that you would fix whatever is wrong in Cooper's little body. You created Cooper and I know you know how and can fix Cooper. I ask that you would make right, whatever is wrong. I ask for Cooper to have a quick recovery. And I ask Lord, that you would minister to Chrissy as well, and give her a peace that passes all understanding. And give her wisdom and knowledge in how to help Cooper, and lead her and guide her today, and restore her joy.  Lord, I ask these things in the name of Jesus and I thank you in advance for your response to these needs and requests.
