Ciliac's Disease and other food Allergies

Quote  |  Reply

Based on my allergies and ciliacs disease I have been, for the most part, reduced to cooking my own meals, does anyone know of good alternatives for gluten free tortilla wraps or a gluten free recipe on how to make them? Also has anyone else been dealing with this or have any other suggestion for good products** they have found??

** Side Note: I am also allergic to ALL seafood, sunflower seeds, and nuts.

The Coeliac Society is a very good resource.  http://www.coeliac.org.uk/  If you're not in the UK, I'm sure there are similar organisations worldwide.

Also, I know that Boston Market has a gluten free menu (aside from the breads and pastas of course) in case you ever need something like that.

Why not use corn tortillas? Corn is gluten free :)

I can't find any only corn tortilla's they're all corn+wheat flour

Really? Authentic ones should only contain corn flour, no wheat at all. Are there any Mexican markets in your area? They'll also be cheap there! Trader Joe's also sells real corn tortillas, if you have a TJs near you. Whole Foods also sells a wide variety of GF products, but WF tends to be pricey. I bought a ton of GF flours at a local health food store and used them in baking. Rice flour was consistently the best in baked goods, IMO.

Also, Chinese, Japanese and Thai markets are a great place to get yummy rice noodles, udon and rice flour wonton/dumpling wraps, etc. They also sell many different types of soy sauce without wheat in the brew process, like tamari. I'm also allergic to nuts, so I feel you - I just leave them out of any Thai recipes that call for them :)

I'm a big proponant of not trying to re-create gluten things with GF products; I've always found them dissapointing. Instead, you might try looking at cusines in countries where gluten is generally not used, like those above. You'll find recipes that are delicious, flavorful and won't need any kind of substitutions.

I never thought of the mexican markets but I will definately have to find out!!! and i totally agree about trying to recreate regular food with GF substitutions and usually I stick with asian cuisines and rice noodles, although I dont really eat carbs all that much but some times I just really crave chicken ceasar wraps... Thanks!!

I also found this recipe for authentic, homemade corn tortillas; all their other recipes are super delicious, so it's a safe bet these are, too:

Although it's not quite the same, try Asian markets for spring roll wrappers. They should be made of rice flour. They're dehydrated so you have to dip them in hot water before using them. This is what you'd look for:
