Claire's Carrot and Raisin Salad Recipe

Makes 4 servings


Sweet & tangy grated carrots with raisins. I make it for Halloween because it carries out the orange and black color scheme.

Ingredients
2 cups carrots
1 ounce raisins
1 tablespoon lemon juice
1 teaspoon sugar
Directions
Coarsely grate the carrots to yield 2 cups. Combine with raisins, lemon juice and sugar. Refrigerate at least one hour before serving.
