| 1 1/2 | cup lentils, dry |
| 1/2 | cup carrot, diced |
| 1/2 | cup celery, chopped |
| 1/2 | cup onion, diced |
| 2 | tablespoons parsley, minced |
| 1/2 | teaspoon salt |
| 1/8 | teaspoon pepper |
| 8 | cups water |
- Put everything into a soup pot
- Bring to a boil
- Reduce to a slow simmer
- Cover and cook for 1 hour
- Taste and adjust seasoning as needed
