Claire's Lentil Soup Recipe

Makes 8 servings


Simple lentil soup. You may use broth instead of the water if you omit the salt in the recipe. Adjust sodium content as needed.

Ingredients
1 1/2 cup lentils, dry
1/2 cup carrot, diced
1/2 cup celery, chopped
1/2 cup onion, diced
2 tablespoons parsley, minced
1/2 teaspoon salt
1/8 teaspoon pepper
8 cups water
Directions
  1. Put everything into a soup pot

  2. Bring to a boil

  3. Reduce to a slow simmer

  4. Cover and cook for 1 hour

  5. Taste and adjust seasoning as needed
