Claire's Multi Grain Pilaf Recipe

Makes 8 servings


A mixture of whole grains, cooked together Serving size is 1/2 cup cooked

Ingredients
1/3 cup brown rice
1/3 cup wild rice
1/3 cup millet
1/3 cup quinoa
1/4 cup sunflower seeds
1/4 cup chopped almonds
3 cups water
1/4 tsp salt
Directions
  1. Bring the water and salt to a rolling boil.

  2. Stir in the grains making sure each grain comes into contact with the boiling water

  3. Turn down to a very slow simmer, cover and cook for 20 to 30 minutes, or until all the liquid is absorbed

  4. Toss with the sunflower seeds and almonds.

  5. May be made with chicken broth or stock (add 5 calories and 100 mgs of sodium)
