"Clean" seasoning for stir fry?
Any ideas? I'm making a chicken breast/veggie stir fry tonight, but want some ideas on how I can season it without using the pre-packaged VH sauces that I used to use (high in salt/sugar/fake stuff).
A little soy sauce mixed with a little rice wine or sherry and water is a good way to marinade the sliced chicken and, if you add in the spare marinade at the end of the cooking, will serve as a sauce too. Grate in a little fresh ginger and some finely chopped garlic. Sliced spring onions (scallions) are essential. And I often chop a chilli pepper into stir-fries to give them some kick. If your vegetables are fresh that usually adds plenty of flavour.
Congrats on switching away from store-bought marinades! They're way more expensive than marinating meat in things you have around the house, and you have way more options with making your own.
I have a chicken breast marinating at this very moment in 1/4 cup soy sauce (don't know if you count this as clean), about 2 tbsp lime juice, 6 cloves garlic, 1.5 tsp olive oil, 1.5 tsp chili powder, 1.5 tsp coriander, 1.5 tsp cumin, 1.5 tsp honey.
Generally, a basic marinade would include:
- Oil (e.g., olive, canola, sesame)
- Wine (e.g., sherry, rice, basic red/white cooking wine), vinegar (e.g., balsamic, cider), or soy sauce
- Sweetener (e.g., brown sugar, honey, molasses, maple syrup)
- Flavorings (e.g., fruit juice, spices)
If you want to make the spare marinade into sauce, mix a bit of cornstarch with a bit of cold water, and slowly add it into the marinade over a medium/low heat until it thickens.
If you do use soy sauce go with light soy sauce. It is much more flavorful then generic brand sold in the stores. Specially that one that is labeled reduced sodium. Bleh.
