Okay so today I did an hour spin class and an hour weights. The whole day, I was STARVING. I ended up eating around 2600 calories. I weigh anywhere from 115 to 120 lbs and I'm 5"3' and 19 turning 20 years old. Is this okay? Am I going to gain? I just want to maintain .. it's weird because some days I do this and I'll eat 1800 to 2000 and I'm good. And somedays I eat my regular 1500ish. Maybe my body was trying to compensate for missing calories from before? =S

You're more than fine. If you exercise for two hours, you burn a heck of a lot of calories. You could eat 3000 calories/day and lose weight. I lost weight eating 2500+ calories/day and exercising about 8-10 hours per week. So don't worry about how many calories you eat. Just make sure the calories you eat are healthy calories...healthy fats, good grains, fruits, veggies, etc. Eating 2600 calories worth of fried food and candy is not good at all. 

If you're starving, then that probably means you should eat. Drink a glass of water first to make sure you're not dehydrated, but if you're still hungry, eat a snack. Listen to your body! Also, if you wait to eat until you're starving, you're likely to binge and eat more than you need. I recommend eating at least every two hours. It doesn't have to be huge - sometimes an apple is all you need for a snack - but this will help to keep up your energy level and metabolism.
