Recipe Ingredients for Coconut Cream Pie with Splenda

10 serving All-Purpose Flour
0.75 cup Butter
4 serving Shortening
0..5 oz SPLENDA No Calorie
1 tsp Salt, Table
1.5 cup Sealtest 2% Milk
10 tbsp Coconut Sweetened
2 large Egg, White
8 oz Sweetener

Recipe Directions for Coconut Cream Pie with Splenda

  1. Put coconut and milk in large saucepan. Bring to simmer (small bubbles around edge of milk, some steam visible). While heating milk, whisk eggs, yolk, sugar, flour until thick and light yellow. Temper eggs: pour small amount of hot milk into egg mixture while whisking. Do that 3-4 times. Then pour all the hot milk and coconut into the eggs, and whisk well. Return the whole mixture into the saucepan and put back on stove on medium heat. Stir constantly with a spatula or wooden spoon. It will thicken, but make sure it actually comes to a boil, until a couple of bubbles break the surface, or it will not set properly when it is cold. Remove from heat, add vanilla (sometimes, I also add a tablespoon of rum, or Malibu coconut rum, for the grown ups) pour into bowl and lay plastic wrap directly on the surface of the custard. Chill for at least 2 hours.

  3. Take out filling, stir well, pour into cooled pie crust. Put plastic wrap directly on surface of filling and return to fridge for about two hours until nicely set. Then whip about a cup of cream, sweeten as desired. Sprinkle toasted coconut on top (put coconut into a dry frying pan over medium heat, and let toast until golden, stir often, it burns quickly).

  4. And you have PIE!!
