Recipe Ingredients for Coconut Shrimp

1 1/4 oz coconut milk
1 jalapeño
1/4 cup cilantro, minced
1 1/4 lbs shrimp
1 tsp honey
1 tsp cayenne pepper
1 tsp cumin
1 tsp Sriracha
1/4 cup lime juice
1 tblsp lemon zest
3/4 cup all-purpose flour
4 egg whites
3/4 cup coconut flakes, toasted
3/4 cup panko, toasted
2 tblsp butter, unsalted

Recipe Directions for Coconut Shrimp

Heat oven to 400 degrees. Prepare a baking sheet with nonstick cooking spray. IIn a large resealable plastic bag, combine remaining coconut milk, jalapeno, cilantro, honey, cayenne, cumin, sriracha, lime juice and shrimp. Seal the bag, and turn to coat. Refrigerate for 1 hour. Toast coconut and set aside. Melt butter in a saute pan with panko and lemon zest. Toast and add to coconut flakes in a bowl. Place flour in a shallow bowl. In another bowl, lightly beat the egg whites. Drain shrimp, discard marinade. Dip shrimp in flour and egg whites, then roll in crumb mixture. Place shrimp on prepared baking sheet. Bake for 7 to 9 minutes on each side or until lightly browned.
