Same recipe, but with smaller portions of veggies... I may have been slightly overzelous before. Oopsie. ^_^;;
| 28 | oz Whole Tomatoes |
| 1/4 | cup carrots |
| 1/4 | cup zucchini |
| 1/4 | cup onion |
| 2 | cloves garlic |
| 1 | teaspoon dried rosemary |
| 1 | teaspoon dried thyme |
- Strain tomato juice and seed tomatoes. Add the rosemary and thyme to the juice; bring to boil then simmer for the rest of the prep time.
- Sweat** the baby carrots, zucchini and onion for fifteen minutes in a roasting pan (or rectangular glass baking dish, which would be what I used).
- Add seeded tomatoes to the veggie mix and place into broiler for fifteen minutes, stopping to stir every five.
- Place tomato and veggie mixture into blender or food processor*** and blend for approximately thirty seconds or until it reaches the consistency you desire.
- Add veggie blend to tomato juice and stir, seasoning as desired and serve.
- *The measurements for this ingredients will vary according to the size of the vegetables you have; the important thing is that the ratios of each are almost exactly equal.
- ** Sweating, technically, is a more mild version of a sautee, if I understood AB's explanation correctly; a sautee is basically cooking several different foods together over high heat in a small amount of fat to lock in each individual ingredient's flavor, but a sweat is meant to mesh the distinct flavors together using a small amount of fat over low heat. I decided to cut out all of the alcohol and fat in this recipe and took at stab at a sweat without the ever-important ''fat factor''; much to my surprise it turned out just fine (in my opinion at least). So, I'm not entirely sure what this would actually be called (a sweat without the fat) and since I don't we're going to fib and pretend that I know what I'm talking about.
- *** I used a Magic Bullet for this process. Our blender and food processor have been long-gone (broken some way or another) and have been replaced by the mesmerizing Magic Bullet food processor, which was used simply because the veggie mix was far too chunky to fit into the type of sauce I was out for and it was quick and easy to use. End of story.
