| 8 | oz angel hair pasta |
| 1/4 | cup rice vinegar |
| 2 | tbs sesame oil |
| 2 | tbs soy sauce |
| 1 | tbs honey |
| 2 | tsp chili paste |
| 1/2 | tsp fresh ginger, ground and bottled |
| 2 | cups chicken breast, cooked & shredded |
| 2 | cucumbers, halved lengthwise and sliced |
| 6 | tbs green onions, chopped |
| 3 | tbs dry roasted peanuts, chopped |
Recipe Directions for Cold Sesame Noodles with Chicken and Cucumbers
- Cook chicken breast and shred or cube.
- Cook noodles according to package instructions. Once cooked cool with cold water.
- Whisk vinegar, oil, soy sauce, honey, chili paste, and ginger together in a large bowl.
- Add noodles, chicken, and cucumbers to bowl; toss gently to coat.
- Top with 1 tablespoon onions and 1 1/2 teaspoons peanuts per 1 cup serving.
