Just curious if anyone has a low calorie coleslaw recipe they can share without mayo (I dont like mayo lol)

Spicy Slaw
&nb sp; 1 small cabbage, shredded
&nb sp; 1 red bell pepper, seeded and julienned
&nb sp; 1 t. Serrano pepper, seeded and finely minced
&nb sp; 2T. Vegetable oil
&nb sp; 2 T. rice vinegar
&nb sp; 1 t. brown sugar
2 t. fresh ginger, grated (not powdered)
&nb sp; Toss the cabbage and peppers in a bowl. Combine the oil, vinegar,
&nb sp; sugar and ginger in a small bowl. Mix well, then pour into the
&nb sp; cabbage mixture, combine all and serve.

I add shredded cabbage and carrots to a taiziki(sp) sauce made up of non fat greek yogurt, garlic grated in and cucumbers all added in the food proccessor and pureed until smooth, I also like to add some dill, but traditionally it does not have dill in it, salt and pepper to taste. I love it!
I have 2 recipes (I adore coleslaw).
First one:
- 1 head of cabbage cut up to fit in the food processor.
- 1 package carrots
- Olive Oil and vinegar (to taste)
Second One:
- 1 head of cabbage cut up to fit in the food processor.
- 1 package carrots
- Ranch dressing (to taste)
Also, I sometimes use the shredded cabbage/carrot mixture as a base for stir-fry (instead of rice).
I use a traditional cole slaw recipe but sub Greek yogurt for the mayo/salad dressing.
I don't tell anyone and the bowl gets cleared at every cookout.
BTW, I'm always glad I don't have to around for the. . .um. . .after affects!
