Ok, I just had to share this with you.  I made this recipe for myself last night after just throwing together a bunch of random stuff I had.  It came out awesome, and you get a HUGE portion that I could barely finish for low calories and almost no fat.  Plus it's very low in sodium, and packed with fiber and cancer-fighting nutrients.  Here goes:

Moroccan Sweet-potato-stuffed Eggplant

Serves 1

Ingredients:

Cooking spray

1/2 large eggplant

1 cup cubed raw sweet potato

1 clove garlic

2 tbsp chopped onions

1 cup sliced squash or zucchini

1/4 cup no-salt-added tomato sauce

Pinch of cumin

Pinch of curry powder

Pinch of cinnamon

Pinch of garlic powder

1/4 cup dry oatmeal

1/2 slice of whole wheat bread, toasted

Preheat oven to 350 degrees

Take a large eggplant, slice it in half.  Scoop out the flesh of one half.

Place the oats in a small amount of water and let them soak.

In a skillet sprayed with cooking spray, sautee sweet potato, garlic and onion until tender.  Then add the squash, eggplant pulp, and spices.  Stir it all up until all the veggies are tender and slightly mushy.  Then add the oats and tomato sauce.  Stir it until well-mixed and heated, then spoon into the empty eggplant shell.  Crush up the piece of bread and put the crumbs on top of the eggplant mixture.  Put the eggplant into the oven and bake for 25 minutes.

I was impressed with how awesome this tasted, considering I just threw it together.  I felt really healthy eating it, plus it really fills you up.  It could easily be an enticing vegetarian entree to serve for family or company.  The whole thing is barely 300 calories, and trust me, it makes a lot.  Plus, there's all kinds of variations you could do.  You could add more vegetables, or even chickpeas or lentils.  Yummo.

Your recipe does sound delicious.  The title of your post....er, not so appetizing!  :D
LOL... sorry.  That's just what came to me when I tried to think of how to describe it :)
