Okay....I am a FAN of great cook books, but I am needing a new one - and fast!
Do you know of a cook book that has awesome recipes (easy and extravagant), that include some comfort food, and that are geared toward the healthy and those losing weight????
One of my favorites is Richard Simmon's "goodbye to Fat" cookbook!! Honestly, some really terrific stuff in there, including substitution suggestions and motivational tidbits!
A New Way to Cook by Sally Schneider. I rave about this book all the time. She takes comfort recipes and makes them healthier without compromising them. The Cassoulet is a favorite but there isn't a single recipe in this book that I haven't liked.

With access to recipes here on CC, and cooks.com and recipezaar.com, I really don't feel the need to get cookbooks anymore. However, from past experience, I know that Better Homes and Gardens makes a really good healthy eating cook book. The best "comfort food" cookbook I've seen (and I bought), was one I found in the NW Arkansas regional airport giftshop, published by their Junior League - not geared towards healthy eating I'm afraid, but with CC tips, it's easy to determine substitutions to make them healthy.
My favorite "cookbook" these days is Cooking Light magazine. I can't say enought good things about it. I imagine their cookbooks are pretty good too. They use regular ingredients that focus on low fat and low cal (they generally don't use no-fat items, though occasionally). They do use things like bacon, cheese and butter, but keep the fattening ingredients to a minimum. I have loved 90% of the recipes I've made, and they are great for finding low-cal recipes for sweets too. All of their recipes include portion info and nutritional info, which is great for logging here.
Check out their website (cookinglight.com). I ate the Tuna and Veggie Stuffed Pita for lunch (added a sliced egg to mine as well). Delicious. Tonight I'm making the Ham and Asparagus casserole - less than 300 calories per serving! Can't wait. I also recommend the (Turkey) Sausage and Peppers Pasta, which I made the other night. Tomorrow night will be Black Bean Burgers. Sorry, but I just love their stuff.
Another great cookbook is The Best Recipe from Cook's Illustrated (also a magazine). They do not focus on low-cal or low-fat, but it is awesome for general cooking knowledge, tips, facts, etc.
Thanks for all of the help and tips! I will check some of these out. I usually just use the internet, but I am tired of that and need a change...so back to the old cookbooks I will go!
Any of the Moosewood cookbooks will fill the bill. Just search for it on Amazon - there's a whole series, all recipes from the famous Moosewood restaurant.
I have the new version of the traditional cookbook by betty crocker and i love it, it gives you all the nutritional breakdown for each recipe and it also gives some substitutions like yogurt for the fats in a recipe and covers everything appetizers-soup-salad-meat-vegetables-sides-t o desert. It can be found almost anywhere.
My new favoriate cookbook is "Eating Well Serves Two" The recipies are almost all prepared quickly, they taste great and there is a lot of variety. Also, no overeating because they only serve two.
There are these 2 great cook books called Looney Spoons and Crazy Plates by Janet and Greta Podleski... They are all low fat recipes and they are great.... for sure give them a try.
