How do you cook your breasts?

Chicken breasts that is.  I am thawing some.  I always do the same old thing, bake 'em with a little garlic S&P.  What does your family love?  I need some ideas...

OUCH!  oh man.. you made my chest hurt!  haha.. anyway.. i use chicken breast all the time.. here's one that we love: 

put 1/2 T. olive oil in the bottom of a baking dish.  put into a 350 degree oven to heat up.  when hot add 1/2 T. worchestershire sauce, the juice of 1 lemon, 1 t. italian seasoning, 1 clove chopped garlic, and salt and pepper (optional)  put 4 skinless boneless chicken breasts (more or less depending on how many people you are feeding this is enough "sauce" to do about 6 breasts) and turn over to coat on both sides.. put back into the oven and cook until browned on top and juices run clear.. moist and juicy! 
Worchestershire!  Good idea.  I never thunk it.
I have a great breast recipie.  Use 1 tsp olive oil, a couple of cloves of garlic, some onions and mushrooms in a pan.  Sautee this all for a bit then add your breasts and cover.  Simmer until done.  They taste great and are nice and juicy.  You can also add a little worstershire or teryaki if it suits your taste.

Coat the chicken breast with some mexican seasonings (like fajita or taco seasoning or you can use key lime spice) Bake as normal or broil.

After they are done put a few tablespoons of salsa on them and gently sprinkle chopped scallions and fat free mozerella cheese over them. Stick them under the broiler for a few minutes until cheese is bubbly.

I serve this with fake mexican rice... which consists of grated cauliflower that you steam until just a bit tender. Add sauteed onions and green pepper with  1/2 a package of taco seasoning and 1/2 a can of drained stewed tomatoes.


I do shake and bake and spray the pan with Pam. Not too many more calories.
I love the bbq shake n bake on chicken. I use that as a dry rub when I smoke things.  Gosh just the thought of that made my mouth water :)
I like to put cooked spinach on top with lots of lemon and garlic, then melt some cheese on the top like provolone or havarti.

I also looove stir fry, so I will get a bag of frozen veggies (bird's eye has one now that is broccoli, carrots, sugar snap peas and water chestnuts), cook them a little over half way in the microwave and throw them in the wok for a few minutes with cubed cooked chicken breast seasoned lightly with soy sauce and some other spices and stuff.

And I like to cut it up and serve with marinara sauce and pasta (or just the sauce if there's no noodles around)


I pound them thin, season them with what ever spices I'm in the mood for and broil them in my toaster oven.  They cook in just a few minutes.  One way I like is to top them with a mixture of light (not fat free) mayonnaise mixed with low fat shredded cheese - about 1 tablespoon of mayo and a half an ounce of cheese per serving.  sprinkle on a few bread crumbs, about a teaspoon for each serving, spray on some olive oil (I use a Misto sprayer) and broil until the tops are all brown and bubbley.

I also like to poach them in salsa on top of the stove.  It's very fast and a real change of pace.
I often use my George Foreman grill for cooking chicken breasts, sometimes I'll use some flavoured herb rubs like Asian, Mediterranean or my favourite, Morroccan or just make my own mix of herb rubs.

I've also put the raw chicken breast in a oven proof dish, and covered with chopped tomatoes (usually flavoured from a can which probably is high in sodium, I haven't checked) and bake it till its cooked, perhaps add some veges in the last 10-15 mins
I like to put my chicken breasts in like a 9x13 pan, cover it with whatever chopped veggies, usually any combination of mushrooms, gr. peppers, zuchinni, onion, carrots, summer squash and brocili.  Pour teriaki sauce over it and place it in the oven at 375 for 30 minutes, mixing it up a couple times.  I call it lazy man's stir-fry.  Sometimes I serve it over rice or noodles. 
I do everything in a steamer, it's the best invention ever. And contrary to popular belief things don't have to taste bland!

With chicken breasts I make a mix of fresh basil, chillies if you've got them (or chilli flakes otherwise), lemon juice, and garlic... (and if it's not wet enough a dash of olive oil) ... then stab the chicken breasts a few times then rub the mixture all over.

Put your preferred veg onto steam at the same time, put your chicken on the lower tier of the steamer first to cook, then swap them over so that your veges get the benefit of the flavours of the chicken.

It goes well with a spoonful of low-fat yogurt dip topping (made from lemon juice, yoghurt, and lots of cracked pepper).  The chicken is lovely and moist!

I also love poaching chicken breasts in a rich tomato and red wine sauce.

I have two very easy recipes...

I take bullseye bbq sauce and dilute with a little water to make it loose but not too loose.  I take heavy duty alum foil and spread alittle of the bbq sauce in the middle- place boneless chick breast on top and make pouch leaving one side open to pour the rest of bbq sauce in and put on top shelf of bbq and close lid for approx 35 minutes- open and grill chicken on open fire with remaining sauce in pouch as a baste until brown- super yummy! (you could use any sauce or marinade you like )

take chick cutlets (you can cut them yourself from boneless breasts) bang them with a tenderizer- season with salt, garlic podwer, onion powder, paprika, thyme and then squeeze either lemon, lime or oj over cutlets and let sit for 5 min. then saute in a pan with a little oil (very good!)

Take the chicken breast and slice it thin.  Take Teriaki, garlic, drop or two of dark sesame oil (you can add fresh ginger if you like) and marinate over night.  The chicken is going to be dark...you can either bbq them, george forman them, bake them, pan them...any way you cook them they will taste great.  

I take the marinade and I cook it...I make some basmati, long grain or brown rice...and pour that marinade over the top...add some scallions if you like and some peas...saute them all ...kinda like fried rice..

A nice salad on the side....low in fat ...high in fiber....and yummy to boot!
