How Do You Cook Your Fish?

I tend to eat the same 2 - 3 kinds of fish all the time: Salmon, Trout or Chillean Sea Bass and I also tend to always cook them the same way, broiled with a bit of seasoning on top... While it is pretty darn good that way, I was just CURIOUS as to how you cook your fish & what seasons, sauces, etc go along with it! (Any/All fish is allowed!)

Yeah, I broil my fish too (almost always salmon), with a bit of Ms. Dash and a ton of lemon.

Also, if I see it in a resteraunt - which is not often - I'll get smoked mullet.  Very fishy, strong taste, but oh, so good.

I boil it and then eat it plain!

That's how I cook almost everything really =P

i bake mine - im addicted to tilapia :) - with a lemon perpper season or a garlic lemon sea salt :) love it :) i actually prefer it over anything even when i do have the cals to spare lol

I make a little foil pouch for the fish (and sometimes I put the veggies in with it), season it with lemon pepper, or mesquite seasoning, or whatever I'm in the mood for and put it on the grill or in the oven (depends on what else I'm cooking).  Its so moist and delicious this way.  I do it with chicken somtimes too.

I love yellowfish tuna steaks ( a bit pricey 2 steaks for 9.99) but well worth it. I cook mine on the grill with some orange juice and soy sauce, yummy. They have some great recipes at allrecipes.com for fish.

I love tuna steaks as well...here is a good one to try.  Coat both sides with honey mustard.  Then roll in sesame seeds and pan sear about 3 minutes a side for medium.  Yummmm.

I make thai red curry with my salmon. With sweet potatoes, red peppers and whatever other veges. First add long cooking veges with red curry paste to the pan, add little water and half boil/fry until water kind of evaporated and pototo pretty much cooked, add other veges, small amount of light coconut milk, and bit more water, cook a couple of minutes, and then add the diced salmon, and cook until just done through. (it is also good with prawns instead)

My all time favorite is grilled halibut with a mango jalepeno salsa, which is just diced up mango and jalepeno and maybe some fresh cilantro.  My second favorite which is a bit more fattening is Broiled Tilapia Parmesan.  The recipe can be tweaked a little to make it a little healthier, using light substitutes for the full fat ingredients, it is sooo good!

I steam my fish usually... I find it keeps it tender and flaky at the same time without any added oils/fats...

 

I'm half Chinese and half white.. but I was brought up in a Chinese household.. so if it's a white fish we just steam it with a bit of grated ginger, green onion (finely sliced) and a bit a garlic.. when it's done we just put a tiny bit of soysauce on it and it's tasty and fresh.. sometimes we use black-bean paste (just a little) instead with green onion.. yummm...

Tastes very oriental/chinese (szechewan)

When I steam fish western style I usually use salmon or cod.. just stick the fillet in a dish in the steamer sprinkle some dried dill over it and squeeze a little bit of fresh lemon juice...

Serve with veggies/on salad (you can also seam the veggies as you do the fish).. I LOVE my steamer!


sometime I'll forgo the seasoning.. do it plain.. and put some salsa on the fish

sometime I'll let it cool and put it on a salad in the fridge to take to work the next day...

If i'm feeling like I want a real treat and I have the space for cals.... i'll put some hollandaise on it or homemade mayo-dill (non-fat mayo/miracle whip of course) or even a yogurt/sourcream tzatiki type thing...

I like to broil most fish too.  Because I have to shop on a budget, I usually end up buying a cheap fish like tilapia, which isn't terribly flavorful in and of itself.  I usually just marinate it in some balsamic vinegar for about 20 minutes, put it under the broiler and put one more layer of vinegar on it.  When the fish cooks, the vinegar carmelizes and adds a wonderful flavor.  Sometimes I'll combine the vinegar with tomato sauce or diced tomatoes and use that as the marinade/topping.  Breadcrumbs or parmesan cheese on top add a nice, nutty, crusty layer.  All good stuff.

I'm a fan of the foil method because I'm usually cooking for one.  Putting one serving into a foil packet with a little lemon and fresh herbs is so good.  I've also steamed firm fish or shrimp with vegetables.  I make a dipping sauce to go with the plain steamed fish and veggies.

Halibut and Salmon belong on my grill  :)   You can use simple seasonings and it's wonderful!  But I do admit I like a think layer of teriyaki sauce on it  :) 

If i have to bake it... it goes in foil pouches with mushrooms, onions and what ever spices I'm in the mood for! 

I like to occasionally cook mine either in the oven or in a covered pan with some kind of a tomato sauce. This works better with a steak type of fish. I love doing it with shark.

I take a can of diced tomatoes, add some green pepper and onion and whatever herbs and spices I'm in the mood for. Sometimes italian, sometimes southwestn/mexican.

I just saw Emeril last night cook salmon steaks by dredging them in sugar and then pan searing them in a little oil. The sugar turned dark and carmelized. He then topped the salmon with a citris vinaigrette. It looked fabulous and I'm going to try that soon.

I like to cook my salmon on the grill or in a frying pan with a little bourbon brushed over the top.   Doesn't take much and tastes wonderful. 

Tilapia I like to broil with a spritz of olive oil and a sprinkle of parmesan.

Trout is great grilled or broiled.

Hey All! Thanks for all your posts!!! I just got a recipe e-mail this morning and this fish recipe looks great! It is a Halibut recipe which sounds really delicious! I sometimes WISH I COULD FOLLOW recipes, but I always tends to just whip something together & eat it! But for all of you who try recipes:

With salmon, I usually use teriyaki sauce.  With different kinds of white fish I bake with diced tomatoes, kalamata olives, and maybe a tiny bit of feta cheese.  It's delicious.  My husband doesn't like fish, but the first time I made it, he said it tasted better than anything he could get at a restaurant.  And I'm no chef, so I think it's a pretty foolproof way to have some tasty fish.  Prep time's minimal too, since I used canned tomatoes.

I eat a lot of salmon it's one of my favorites.   I generally go for the foil poach in the oven, but broil or grill sometimes as well.  The seasoning I like best is a very liberal coating of cumin.

I like my fish grilled, cooked in the oven (without the foil) with vegetables - tomatoes and onions most of the time.
The sweet and sour sauce from uncle ben's goes well with white fish fillets, I really like the combination.
I also eat a lot of canned tuna mixed with rice or potatoes and various other vegetables.
