cook tomatos in tortilla dont want watery mess

hi,  making mozz cheese and tomatos in tortilas, like a guesadilla tonight,  same as last night, but because of the mozzcheese and tomatos it was a wet mess,  what can i do diffrent?

You can remove the seed from the tomato, cut in half squeeze until the seeds are removed and then slice or dice.  All the water is in the seeds.

you can also thicken the tomatoes by adding cornflour (although this adds calories)

or, another option is to keep the tomatoes on a low heat so they condense?

 this is the way to go without adding cals!

I like to seed and skin my otmatoes (I just find the skin SOOOOO nasty)

If you cut a shallow X in the bottom of a tomato and drop into boiling water for 20 sec then run under cold water the skin will peel right off. Then I cut in quarter and scoop out the seeds with a spoon.

After this I would still reccomend patting with a paper towel to get the last bit of water off.

Even when I use tomato slices with the seeds in I always pat with a paper towel so my sandwiches don't go soggy.

bobo - just how are you making your quesadillas that they are so soggy??? are you adding the tomatoes inside the tortilla and then cooking them? Why don't you add the diced or sliced tomatoes on top of the tortilla once you've cooked them? you can then season the tomatoes with salt, pepper, lime (if you like) and some cilantro.. I love to make fresh salsa - diced tomatoes, chopped red onion, green bell peppers, fresh cilantro, salt, pepper and cumin, and lime - yummy!

about the cheese, try using less tonight so the amount of liquid released during cooking is less.. also, make sure you cook them in a hot skillet with just a spray of cooking oil. The heat of the skillet will make the liquid of the cheese evaporate rather quickly..
