what are you cooking for Easter?

Well, for breakfast my family and I will be having french toast and bacon. For lunch it'll be something very small like yogurt or nothing at all. For dinner there will be ham, mash-potatoes, corn, peas, rolls, salad, cranberries, cake, ice cream, and cininnon buns. Sounds good doesn't it ?

I'm going to attempt to make some 'Grilled Lamb Brochettes with Lemon and Dill' along with baked potato and salad. I hope it turns out!
Roast lamb with pumpkin, potatoes, peas, carrots, broccoli, brussel sprouts and gravy for lunch. It's just a typical Sunday roast but it will be so warm and comforting seeing as it's such a cold miserable day.
I am making cavatappi ameritriciana (a very spicy tomoato pasta dish with white wine).  It is a normal dinner for us, because we don't have Easter dinner on Easter Sunday.

My husband is a chef, and will be making a full spread for over 300 people.  The last thing he wants to see when he gets home is ham!

I will try to make room for dinner, but most of my calories tomorrow will be spent on Jelly Belly beans!

im making sweet potato balls to bring to my parents' for dinner. It's basically mashed sweet potatoes w/ butter, cinnamon, and brown sugar if you want. You roll them into balls w/ a marshmallow in the middle, then roll in corn flakes. Bake w/ a pad of butter on top if you want and voila! Pure yummy

i just made a chocolate chip pie. not very easter-esque, but it will be eaten, i'm sure of that :)
ktcort, you're killing me.  That sounds amazing.

In keeping with trying to improve the overall quality of eating with a family of four, here is where we are at for Easter. I just made breakfast with french toast, made with cinnamon, nutmeg and vanilla, cooked with as little butter as possible. Breakfast sausage links and scrambled eggs. Of course real maple syrup. Let's call it brunch actually. For dinner my husband will be roasting a fresh turkey with rosemary and garlic. No stuffing, we are having Yukon Gold mashed potatoes...again skipping the butter. A great way to flavor potatoes is to use chicken stock.  The ol' green bean casserole with fresh green beans,  Campbells' Cream of Mushoom (no milk), and steamed aspargus with lemon, maybe a bit of romano sprinkled on top too. Happy eating everyone!

We're having:

antipasto and a couple of dips for apps

ham

potato salad made with red potatoes (I left the skin on)

deviled eggs

roasted asparagus (served chilled)

spinach salad with red onion, sliced strawberries and homemade honey mustard dressing

rolls

and someone else is bringing dessert

... it's about 2 hours until the family descends on us. I made everything but the ham and the salad yesterday (but I did slice the strawberries and red onions - just have to toss it all together now). Everything else is going to be served cold, because I didn't want to have to fuss in the kitchen today!! And also we're having so many people, we're likely to eat on plastic plates standing sitting wherever...

 they are amazing! and really not that high in cals b/c you use sweet potatoes. if you use a lower cal butter or margarine, not a lot of brown sugar, then its not bad at all! and it's good b/c you are less likely to take a second helping b/c then you would have to take a whole nother ball instead of just a little scoop!

Wow, everyone makes such a big deal over easter o.o

We had my nan over for dinner so she wouldn't be alone over Easter so we had a nice salad and some raspberry and mascarpone roulade (sp?) but we wouldn't have done anything unusualy if we weren't having nan over.

For breakfast we had a fruit plate with cantaloupe, honey dew and strawberries which we dipped in vanilla yogurt. Everyone also ate some of their easter type chocolate (my mother kept my trying to eat healthy in mind and bought me a small 70% cacao lindt bar). For dinner we're having roast chicken, mashed potatoes, asparagus and peas. And for dessert we're having (a small amount Wink) of apple pie. Nothing fancy, but my mom and I are eatting healthier so it's nice.

We had pretty traditional holiday food:

Ham

Mashed potatoes

Sweet potatoes

Green Beans

Rolls

leftover Lamb from last night's dinner.

Chocolate cake for dessert

we had made to order omelettes, mixed berries and mimosas for breakfast and then veggie eggrolls, asparagus (with garlic and a little cheese), carrots, and spanakopita for dinner....it was all very yummy.

My mommy made:

baked ham

mixed vegetables

mashed potatoes

and Garlic bread

SO DELICIOUS!

Easter was @ our place. We kept it pretty simple:

Too many "bad" snacks to mention-

I made french onion dip w/ light sour cream, placed it in hollowed round sour dough bread- you dip the bread into the dip... it is amazing.

My brother made artichoke dip w/ bread

Crackers & Cheese

Chips & Dips

My SIL brought a cheese cake

We had chocolate eggs & kisses

And I tried not to eat most of it... I had 1/2 slice of cheese cake... I tried to resist but it was tough! Embarassed

My hubby's family normally has a gathering at someone's house, and we were going to bring chili, but we decided not to go.  Consequently, nothing out of the ordinary was made, since outside of family, we don't particularly celebrate Easter.  However, my oldest son does like Easter egg hunts, so we boiled and dyed eggs, did an indoor hunt, and the eggs my son didn't eat, I made into egg salad.  Hubby and I put it in pitas and served strawberries on the side for a nice spring dinner followed by a little bit of the kids Easter candy they decided to share (courtesy of grandparents who insist on giving Easter baskets)- all the while watching nice fluffy snowflakes drop outside....Undecided

We had boiled crawfish!!!!!!
