Cooking Light Golden Winter Soup

Oh my goodness... I made this today because the weather is nasty outside and it sounded like a good, nourishing lunch.  It is so amazing.  A cup of the soup alone (without the cheese bread included in the recipe) is about 150 calories and has 3 grams of fiber. 

 Butternut squash, potatoes, leeks.... this one is a winner!!

Agreed! I made this soup for my family and everyone loved it! Very easy to make, one of the best soups in a while! Loved it. Making it again tomorrow.
I love butternut squash soup, but never thought of putting in leeks or potatoes.  Must try it!!!Cool

I'm also going to substitute cauliflower for the potato. It's been a theory of mine for a while, if its just like mashed potatoes it could probably also thicken soup for less calories as well.

I love this soup! I was a biit worried it would be bland and thought I could add curry to it at the end if it needed more flavour.

I couldn't believe how much flavour there was in it.  A couple of minor changes, substituted cauliflower for potato, added some minced garlic with the leeks and I cut back a bit on the half and half (about 3/4) and added 1/2 more broth.

 Thanks so much for posting this, it will be making a regular appearance.

wow, thats a great idea with the cauliflower... I'm going to try that!
