cooking for post-op lapband!

Hello -

I recently took some time to come home and help my family as my father adjusts to life after a lapband surgery. He is recovering well, but as I've come to find out, has a severely limited diet. Today, he's nearing a month out of surgery and beginning to include some real food into his diet (before we were feeding him baby food, broths, hummus, babaganoush, apple sauce, and shakes)

I am a vegan cook whose been preparing meals for years, and I am flabbergasted at what I can't work with for his diet (and as a vegan, it is HARD for me to be shocked by any ingrediant black-list) while still trying to ensure he gets as much of his daily nutrients as possible. Also, he can only take very small portions of anything - a bowl of soup will last two or three meals for him - which isn't a problem typically, but I'm worried that is roughly 800 calorie a day meal plan isn't providing enough nourishment.

So I'm begging for help. He's somewhere between pureed and VERY soft, easily digested foods stage. This morning he did fine with a tofu scramble, but he still can't have most fruits (the skin is too difficult to digest), any pasta or breads, tough meats, and high-fiber foods. Does anyone have any suggestions?? I'd be SO greatful!

Didn't he get some advice on nutrition and dietary recommendations from his surgical team?  Is there any aftercare or follow-up he can call on?    He's almost certainly going to need vitamin and mineral supplements on top of any food he can eat if he's to be healthy.  Fibre is a really difficult one for 'bandsters' (I think they call themselves) because fibrous food (even pureed etc.) are just too filling. 

Protein is important... I've read that post-surgery they are meant to get 60g protein a day.  So pureed meat, fish or eggs ... if you can cook those... might be useful fibre-free solutions alongside tofu.  Beans aren't going to work, I don't think.  There are quite a lot of books available 'Recipes for life after weight-loss surgery' is a typical title.  Good luck

he did get a lot of suggestions, but even those got to be bland after a month solid - thank you though! we had good luck tonight with spaghetti squash and sauteed high protein veggies...it's a battle!
