Before or after Cooking Question

Could someone please answer me this question.

If I look up salmon it says 3 OZ is 175 calories. Is this the weight before or after cooking? There is normally shrinkage with meats. So if I buy a 4 OZ piece and it cooks down to three, which number do I use?

All meats are cooked weight.  Usually, you can safely take 25% off of your raw total and come out right.  So-- your 4 oz raw would be 3 oz cooked.   Hope that helps!
