Cooking for my sister! AHHH!
First off, my sister is a vegan. And I'm making dinner for her tonight.
She's not too huge on fake meats, from what I gather. Occasionally she'll eat cheese, if it's in the ingredients, but that's rare. I'm not a great cook to begin with, and I know very little about vegan cooking.
What's your favorite vegan meal to serve to guests???
Edit: P.S. it doesn't have to be low cal.
Well, don't know what you've got in your cupboard, but here's a good chili recipe with sweet potatoes and pinto beans that's vegan.

You could also do something really easy like bean tostadas, if you can find some vegetarian refried beans, then all you'd have to do is chop up the veggies for the topping.

- JICAMA SLAW
- 1 large jicama, peeled and finely shredded
- 1/2 Napa cabbage, finely shredded
- 2 carrots, shredded
- 1/2 cup freshly squeezed lime juice
- 2 tablespoons rice vinegar
- 2 tablespoons ancho chili powder
- 2 tablespoons honey
- 1/2 cup canola oil
- Salt and freshly ground black pepper
- 1/4 cup finely chopped cilantro leaves
Place jicama, cabbage, and carrots in a large bowl. Whisk together the lime juice, vinegar, ancho powder, honey, and oil in a medium bowl. Season with salt and pepper, to taste. Pour the dressing over the jicama mixture and toss to coat well. Fold in the cilantro. Let stand at room temperature for 15 minutes before serving.
