Cooking with soy milk?
May I pick your brains, please? I'm thinking of switching to Silk brand soy milk from skim milk. I don't drink milk at all, but I do use it on cereal and I wondering if any of you use it in cooking? If you do, does it affect the flavor of your dish in any noticeable way?
Cereal mostly for me. I drink Blue Diamond unsweetened almond milk. Its really good actually. Only 40 cals for 8 oz. I am not a big milk fan. I was reading a receipe for curry and they used soy instead of coconut milk or real milk. So that may be an alternative. But i know there are certain receipes that I have done and it has clearly stated soy milk wont work. I think one was like jell-o instant sugar free pudding.
I use soymilk in all cooking I can get away with. Soy has worked for me in rice pudding, pancakes, pies, I think I may have even tried a cake or two (can't remember the results though). Just experiment and have an open mind. One tip, be mindful of the sugar in soymilk. There are some great unsweetened brands but others can have up to 20 grams of sugar!
Soy milk work in many recipes without changing the taste all that much.
A good way to find out if it will work is to see if you can find a vegan recipe, they mostly use soy milk as a milk substitute.
