My wife and I cook dinner together. It usually consists of one serving of a carb (rice, potato, or couscous), a meat (chicken, fish, or red meat) and a veggie medely. I use many veggies (broccoli, onions, garlic, cauliflower, sweet peppers ect.).  Our problem is that we are BORED with the sauteed veggies. Lets hear it if you have new and exciting veggie ideas...

My roommate puts them in the oven. She cuts up and slices zucchini, squash, onion, tomato...some pepper and spices, tops with shredded mozzarella and bakes it for 30ish minutes. Or until the veggies are tender. They are delicious. She may drizzle some EVOO on top before the spices and cheese, but I'm not quite sure. I just see it once it comes out of the over and tastes delicious!


You can also just toss some of your favorite veggies in balsalmic vinegarette with some feta cheese. Yum!

I roast mine too, without the cheese.  I toss everything in a large bowl with just one tablespoon of olive oil, mixing it up until everything has a very light coating of oil.  Then spread them on a baking sheet and sprinkle with salt and pepper.  At 350 F, it takes from 20 to 40 minutes, depending on which vegetables and how big the pieces are.

I also steam them until crisp/tender, and make this Low Fat Cheese Sauce.  The sauce can be seasoned any way you like.
