Mile High Altitude Corn Bread or Corn Muffins. Great warm right out of the oven with any warm hearty soup, stew or chili. Or next day for breakfast.

Recipe Ingredients for Corn Bread - High Altitude

1/3 cup canola oil
1/3 cup sugar
1 egg, beaten
1 1/4 cup 2% milk
1/2 teaspoon salt
1 cup flour
4 teaspoons baking powder
1 cup cornmeal

Recipe Directions for Corn Bread - High Altitude

Mix oil and sugar; add egg and milk, then dry ingredients and cornmeal. Stir only enough to combine. Fill greased 8 x 8 casserole pan and bake 425 oven for 30 minutes or until well browned. Let sit in pan or about 5 minutes to cool before cutting.
