Corn is a healthy food indeed! Corn has been the staple food of Mexico and Central America since primitive times. Corn is actually a grain, not a vegetable, and like all grains, it’s energy comes from complex carbohydrate (starch) with just a tad of unsaturated fat. It is a great source of nutrients we don’t get enough of, like folic acid, potassium and dietary fiber, and it contain protein in the germ and bits of other nutrients too numerous to mention.
