Recipe Ingredients for Corn Salad

2 cup frozen corn (11179)
149 g (1 cup) green pepper, finely diced
149 g (1 cup) red bell pepper, finely diced
80 g (1/2 cup) red onion, finely diced
1/2 tsp fresh basil, chopped
1/4 cup balsamic vinegar (91979)
2 tsp olive oil
1/2 tsp salt
1/4 tsp ground black pepper

Recipe Directions for Corn Salad

  1. Place frozen corn in a colander and run under cold water for about 5 minutes to thaw.

  2. In a medium bowl, toss together corn, green and red pepper, red onion, and basil.

  3. In a small bowl, whisk together remaining ingredients and pour over salad. Toss to coat.

  4. Tip: Place a wet paper towel under a wooden cutting board to anchor it while you are dicing vegetables.
