cottage cheese chicken salad

mmmm this is so delicious, i made it yesterday:

1/2 cup cottage cheese (try and smoosh it up so it is a smoother consistency)

about 1 1/2 cups chopped up chicken breast (or canned chicken)

dried cranberries

diced celery

diced hickama

some curry powder

and if it is too dry, either add more cottage cheese, or a dollop of light mayonaisse.

 

eat with a whole wheat pita and romaine lettuce :)

It does sound good- the perfect something to pack for lunch!

What is hickama?

It does sound good but what in the world is hickama?  I can't even find it in the dictionary. 

HA i butchered the spelling of it. its actually jicama.

its a vegetable, kinda looks like a potato...but the inside it like clear whitish. 

l googled Jicama and according to google it tastes like a pear or apple, which sounds good to me. l will try this for lunch sometime this week.

I can't get Jicama here... so I think I'll add pear as a substitute...

I think a fresh, crisp pear would work, but it will be sweeter than jicama.  You want something crunchy to replace it, so a soft, ripe pear wouldn't be good.

Maybe try bamboo shoots or water chestnuts?  or even a radish for some spice.

Laughing those ideas sound yummy...  I will have to experiment to find the best substitute... I'll try the crisp pear tomorrow (because I have one in my fridge)... that'll be my lunch!
