Cottage Cheese!! Don't like the texture? Try this:
I'm not fond of the texture of cottage cheese. I tried getting used to it, but always cringed at the slime. Anyways, today I decided "Cottage cheese is good for me! I'm going to find a way to make it into a snack!" Best thing ever happened:
Recipe:
1/2 cup fat free cottage cheese (80 cals)
4g's Sugar Free Jello CHEESECAKE mix (approx 13 cals)
Stick it in the blender (I used my magic bullet) and blend that baby up. You might need to add a couple tablespoons of water or milk (i used milk) to break it up. In the end you have a creamy treat that reminded me of cake mix. SO delicious. I'm going to start making this as a dessert, and crumble 1/2 a graham cracker on top. Try it with all kinds of sugar free jello mixs. mmmm cheese :)

I'd def give it a go. My boyfriend who is really weiry of cottage cheese tried it and his eyebrows rose and he said 'humm, pretty good' so that's sayin something.
Maybe it reminds me more of cream cheese? You could use it as spread for sure.

My mother-in-law taught me this one: in almost any recipe that calls for sour cream, you can substitute an equal amount of cottage cheese - just blend it in the blender or processor. In some recipes, I find that adding just a quarter tsp of vinegar is necessary but, otherwise, it really does work most of the time!
I was thinking about replacing my ricotta cheese with cottage cheese in lasagna. Didn't know this stuff was so versatile.
I've done cottage cheese in the blender with fat free cream cheese to make an awesome dip for druit! At the time i added a pack or 2 of splenda. If i made it again I'd put in stevia since i switched to that if i use it. I think I put in a dash of cinnamon too.

I've been using this in my lasagna for years, when I grew up we couldn't find Ricotta so we had to use cottage cheese. But when I make lasagna I substitute low fat sour cream as she doesn't like cottage cheese.
Does it alter the nutrition content if you rinse it off before you eat it? I don't like the slimy whey - the curds are alright.

I have no idea what that does to the nutritional content. I guess we could look up liquid whey and figure it out. If it was me, I'd just go ahead and log the cottage cheese as is and not worry about such a small amount of whey you rinsed off.
Have you tried "pot style" cottage cheese? It's drier, not swimming in creamy stuff.

Whey gets a bad rap, but its where most of the calcium is! Eat up for your bones!

I just tried out this recipe, and I'm sorry to say, I thought it was disgusting.
I used less cottage cheese (I just wanted to make a taste) and kept putting more and more cheesecake pudding mix in, but it never started tasting good...
You could see it as a healthy alternative to something sinfully sweet, but it definitely does not satisfy my cravings. Kind of made me gag, actually.

Cottage cheese and salsa is an awesome combo! A great replacement for sour cream!
You should try a light wrap with chicken and vegetables, toasted, and then add cottage cheese and salsa on top.. I tried it for lunch today and it was oh so good! ![]()

This has become a favorite at our house. I sub splenda for the sugar and skip the almonds (didn't have) and cool whip (don't need it).
