Cottage Cheese: making it more palatable?

Quote  |  Reply

So I've started including cottage cheese into my diet to get some high-protein recovery food for after weights training and karate.

It's ok, and the flavour isn't awful. It is quite bland and occasionally very tangy though. I've had it on crumpets with ham on top, and the effect of sandwiching the cottage cheese between the two means I don't taste it as much!

Any hints or tips on simple recipes involving cottage cheese? Even things to mix it with on bagels?

I used to not be able to stand the stuff, for like.... my whole life until I was 26.

I am working my way to 2% from 4% below 4% made me gag still.

Lots of people mix fruit, like pineapple or strawberry. They sell it paired with those fruits too. Or a bit of some sort of jam.

In recipes that call for ricotta, I use cottage cheese.. so.. idk what you can do with that information :D probably nothing :)

I also only eat 1/4c at a time - which is more than you think if you weigh it.

You could also try a whey protein drink, or some special k20 water, 50cals, 5g protein/5g fiber - which is low, but its quick and easy and adds a bit of both things.

My tip is not to buy the very, very low-fat stuff but look for something a little richer.  The lower the fat content the more acidic the flavour tends to be.   Nice things to mix it with in a sandwich are more gutsy flavours....  smoked salmon, chorizo sausage, grilled smoked bacon, sundried tomatoes & black olives, baby leaf spinach or rocket leaves.

Seriously though, if you don't like cottage cheese, don't eat it...

Mix it with artificial sweetener and cinnamon. Spread on toast and then broil. It tastes like a sweet roll.

This is an old WW recipe. Check out their cookbooks at the library.

Salsa = low cal and big on flavor.

1cup cottage cheese 1/4cup salsa seems to work for me, top it with some shredded low fat cheese of your choice. great by itself or with chips if you want some more cals/carbs.

I used to hate the stuff too but I think that was because I was buying fat free. Lately I've been getting the Hood low fat kind and I'm pretty much addicted. I think the brand makes a big difference too, but I haven't tried many others.

I usually use it in place of mayo on sandwiches or in tuna/chicken salad.. in my omelets or mixed into some mashed potatoes. It's great on sweet potatoes or on top of any other kinds of veggies. I also started using it in place of ricotta. I'm not a fan of mixing it with fruit though, definitely like it more savory. Black pepper helps.

But yeah, if the stuff is still gross to you after experimenting then don't eat it. Body Tech makes a pretty good banana flavored whey powder.

Its good to mix it with an egg and some veggies, put it in the oven for 20 mins and it makes a nice quiche sort of dish.....(without the pastry)

I love to mix (1%) cottage cheese with apple or pumpkin butter. They have fewer calories than jam but they still add a ton of flavour. Sometimes I use honey or agave instead.

Red grapes are my favourite fruit to eat with cottage cheese.

I love cottage cheese!  There are a gazillion things you can add:

cracked pepper,  diced tomatoes,  olives,  canned tuna,  capers,  peanuts or other nuts,  fruit,  parsley and other dried or fresh herbs,  soy nuts,  sunflower seeds,  seasoned salt, topping for baked potato....use you imagination.  Enjoy.

appletwo - thanks for posting that web site - I bookmarked it.

I am loving "Rachel's" right now.  HEB sells it, don't know where you are, but they have awesome flavors and they are in single serve containers. http://rachelsdairy.com/

I like to use it on top of a salad instead of salad dressing. I also find the smoother texture of "small curd" cottage cheese much more palatable (2% Breakstone's is my favorite).

I like this recipe a lot too: http://www.epicurious.com/recipes/food/views/ Herbed-Cottage-Cheese-with-Multigrain-Bread-1 08654

I you have a sweet tooth and you like marzipan then this is for you =D

10 grams almond flour, 15 grams whey protein (optional), 10 grams raisins, 60 grams cottage cheese a little sweetener and a little almond flavor (optional)

It tastes like an almond cheese cake, yum Tongue out

Look for soft farmer's cheese.  It's cottage cheese that has had some moisture removed but is still crumbly.  It's a nicer texture and not as wet, so it's good on toast with a little fruit spread.  I've stopped buying cottage cheese in favor of farmer's cheese

I don't mean this as spam, but it tells what the product is and shows a picture of the package.

I love mixing in blueberries or a cut up pear. I don't know why, but it's delicious.

I blend it with Stevia, vanilla extract, and one egg white. (buy the pastuerized kind if you're so worried) kinda tastes like cheesecake flavored pudding.

Add chopped parsley and salt, that works for me.

Get the pineapple ones! It's sooo delicious. Also try the cottage rounds, it comes with a sweet strawberry jam ish thing. You can get your own jam/fruit and mix it in there.

Personally I just eat it with some sugar + peaches/whatever fruits I may have. I actually stocked up on pineapple cottage cheese though, it's sooo good. I keep on eating it and eating it.

With my fat-free cottage cheese, I drain out a lot of the water everytime I open it up. I like it mixed with pineapple chunks and a little of its juice, cherry tomatoes with a little salt and pepper and some olive oil, and then with mashed up canned apricots with cinnamon. Very tasty. :-)

As a kid my mom used to mix up full fat cottage cheese and sour cream and we used it as dip with homemade french fries. It's still delicious today with everything reduced to low-fat or fat free, and with baked french fries or potatoes!
