Hi there,

I've recently discovered cottage cheese... and omi god I almost fainted with delight and pleasure on the first 'taster' spoonful. It's the milky, creamy flavour but with the chewy bits in it that... that's so sooo soooooo darn good :P~

Now I see what people mean about this stuff!!!! I'm sure there have been posts about it before but I was wondering, does anyone have any favourite recipes using cottage cheese? so far I've had it on toast with tuna and beetroot... or just plain outta the tub with a spoon.

Could it be possibly fried in a pan? and added to a home made curry sauce... or... what about deserts?? does the low fat version taste as good as the full fat... I've been eating the  because I like the real deal, and it's still only 125 calories per half a tub.

It's too watery to "fry" but it cooks up nicely in casseroles, like lasagne or mac & cheese.  It's also good in an omelette, if you drain it well first. 

I just eat it as is.

you can add it to cooked oatmeal

you can eat it with fruit (my fav is berries)

with cereal

just plain by itself!

with scrambled eggs

on toast by itself, on toast with tomatoes

I love that you can make it into something sweet or savory, depending on what you mx it with

 

I like mine with cinnamon and applesauce, pineapple, or various flavors of jam/preserves in them!

It's also good as a substitute for ricotta cheese in lasagna~

I love spicy cottage cheese! Hot sauce, cracked/salad grind black pepper and a bit of crushed red pepper- hmm!!!

I have used cottage cheese in place of yogurt to make my green smoothies in a blender.

I also made baby spinach-cottage cheese stuffed shells with homemade tomato sauce.

When Claire said it is too watery to be fried, I agreed with her at first and who would want to try frying cottage cheese?! But my curiosity was piqued so I looked up online and found a lot of "Paneer"- fried cottage cheese, mostly in Indian recipes so it CAN be done. I am going to try some of the recipes I saw in my search. Thanks for giving me a new idea, OP! :)

ETA: You could make cottage cheese pancakes from scratch for a bit of more protein.

I especially love it with peanut butter. (omnomnom)

OMG that sounds so good. I will try....

i eat this every day!!!!! no kidding. i think the last time i didn't eat this in a day was..... on vacation over a month ago?

my favorite is with cut up frozen peaches, cinnamon, and sugar. 

strawberries with hot cocoa mix sprinkled over it.

with dried basil, eaten with toast and/or raw veggies.

inside crepes!!! with your favorite fruit, and i like mine with cinnamon sugar.

super health food, but yummy: frozen blueberries and wheat germ (and sugar, hehe).

in lasagna.

with baked eggplant. (you can use whatever else you like with the eggplant: eggs, tomato sauce, basil, bread crumbs, parmesan, etc, but cottage cheese makes it awesome!)

on baked potatoes. 

if you're willing to sacrifice the chewy bits in it, cottage cheese is also sooo good in the food processor with fruit (i add sugar and then stick it in the fridge for a little while). it's good on toast, bagels, crackers, pancakes, crepes, whatever.

it also makes shakes extra creamy. yum.

I used to eat it with ranch dressing...

It's also great for High Protein pancakes. Use it in the batter and also as a topping for the pancakes along with some all fruit preserves or jam. Awesome!

Thanks so much everyone, for your tasty sounding ideas. I think I'll stick with savoury uses for cottage cheese as I tend to go for yoghurt if it's sweet.

I'm going to try it with baked potato for sure. I also like it on freshly grilled ciabatta bread with canned salmon.. with a bit of avocado.. omi god.

amandief, thanks for that paneer recipe.. yeah I thought it was similar to that already but somehow making it into balls so it can hold together in a curry sauce would be good.

Does anyone notice the difference between the fuller fat version and low fat? I like the full fat it jut seems more richer, and it's not that much higher in calories anyway ^_^

Low fat is healthier but fat free has more sugars; it depends on how you want to balance your fat intake as to what you want to eat.

Hi, this may not be popular withe the crowd but I like cottage cheese on a big baked potato. Yummy, better than sour cream.  Unfortunately, I must caution you on the sodium content.  My dietitian has saggersted dry pressed cottage cheese (they have found a way to remove the salt).  I have a package in my fridge right now waiting to be tried.  I would be happy to share but I am all the was in Niagara Falls, Canada. ;) 

P.S. Apparently the dry pressed has a different texture and is easier to melt:)

 

One of my favorites...toasted rye bread, spread on a thick layer of cottage cheese and add some fresh ground black pepper.
