what to do with cous cous?
I love cous cous but I can never think of anything imaginative to do with it!
What do you mix with cous cous or what do you do with it to make a tasty snack or meal?
Any ideas would be greatly appreciated! :)
sometimes I mix in cooked bell peppers or a bit of parmesan cheese and diced tomatoes.
Add
roasted eggplant or spinach, or just parsley and a little parmesan cheese
honestly i cheat, so if you are into really "clean" eating this isn't for you. BUT... Marrakesh Express makes a mango salsa flavored couscous that is AWESOME! it's not spicy and just the right amount of sweet.
I make this to take to work and eat cold:
Cook a small chopped onion and a handful of mushrooms (and whatever other veggies you have/like)
Add a serving of dry cous cous, half a stock cube, pepper and water
Let the cous cous soak up the water
When its cooled down, add a handful of almonds or cashews and eat cold

that sounds yummy but im in the UK. i'm guessing thats an american brand?
any other cous cous ideas?
I make up cous-cous with chicken stock & olive oil, mix it with nuts, raisins and various chopped vegetables, and then use it to stuff peppers and flat mushrooms. As I'm also into Moroccan cooking, it makes an excellent side-dish to tagines.
Mmmm that sounds really good gi-jane (though i had to google what a tagine was!). I might give that a go!
This is very simple: throw in a handful of dried cranberries and grate in some orange zest. Let it sit for a minute so the cranberries get a little plumper and softer. Delicious as a side dish to chicken or turkey. I bet it would be yummy with pork as well.
I'm not a big fan of cous cous but when I saw this recipe for an apricot lamb tagine, I was tempted (though I would use chicken instead of lamb).
This is really different:
mix cooked couscous (cook in broth or 1/2 broth 1/2 milk -- way better than water) with slivered sushi ginger, finely chopped cucmber, sesame seeds (black looks good), a tiny spash of sesame oil and a tiny splash of rice vinegar. Serve it with steamed or roasted white fish. Or just eat it as a salad.

My son loves when I throw in golden raisins and peas are good to toss in (not together)
Add in some chicken (or vegetable if you're a vegetarian) bullion! Sauteed vegetables and or tofu!
I cut up some cucumbers, tomatos and red onion with a little light or FF Italian dressing, add some feta and mix it in plain couscous, warm or cold..warm the feta melts.
I love it plain as a side dish too.
