CousCous Recipe Please!
Anyone have an amazing recipe for couscous? Chicken with it perhaps? I found a box in the back of the cupboard!

Prepare the cous cous with chicken broth instead of water, then saute chopped leeks (or onions), chopped celery, and grated carrots. Dice cooked chicken and add to the saute with thyme and sage, salt & pepper. Toss with the cous cous and keep warm until served.

Cold cous cous salad. Prepare the cous cous according to package directions and mix with chopped scallions, fresh parsley, fresh mint and fresh garlic. Toss with lemon juice, salt & pepper. You can also add chopped tomatoes and cucumbers for added juiciness and crunch.
I like to do something with a little middle eastern flair... Make it with some chicken broth, and then add a little orange or lemon juice, some raisins, some onions, some cumin... And then I mix in pre-cooked chicken at the last minute. That cold salad that clairelaine posted sounds pretty good too! Or you can substitute it for the bulgar wheat in tabouli for a faster tabouli without the overnight soak (but the whole wheat bulgar is definitely better for you.) :)
I make this quick Moroccan stew with chicken, carrots, celery, onion, zuchinni and chick peas. It is really good over couscous.
